3 DELICIOUS BANTING RECIPES WITH MINCE

Running out of Banting diet recipe ideas? Here are 3 delicious Banting recipes with mince that can be cooked for dinner tonight in not time at all.

 

1. HAMBURGER PIE WITH EGGPLANT

 

INGREDIENTS YOU WILL NEED:


• 500g mince
• 1 ½ teaspoon salt
• ¼ teaspoon pepper
• 1 teaspoon Worcestershire sauce
• 1 teaspoon mustard
• 1 cup eggplant, cubed
• 1 can tomatoes, 450ml, drained
• 1 can tomato sauce, 250 ml
• 1 cup grated cheese mozzarella
• 1 Tablespoon parsley
• ½ teaspoon oregano

 

THE PROCESS FOR THIS BANTING RECIPE WITH MINCE:


■ First, begin by sprinkle cutting eggplant with salt and let it sit in a colander for roughly 30min. After this, rinse then fry the eggplant until it is nice and brown.

■ Second, mix the salt and pepper into the beef with Worcestershire sauce and mustard.

■ Press the mixture into a pie plate that is roughly 20cm in diameter.

■ Lay the cooked eggplant over the mince.

■ Spread all the tomatoes and sauce along with the left over ingredients all over the eggplant.

■ Put the pie plate into the oven and leave it to bake for 35 to 40 min at 190°C.

And there you have it, a nice lekker hamburger pie. This Banting recipe with mince serves 6 people and has only 6 grams of carbs per serving.

 

2. TOMATO CASSEROLE WITH CABBAGE MINCE

 

 

INGREDIENTS YOU WILL NEED:

 

• 1 headed cabbage
• 500g mince
• 250ml of tomato sauce
• 180ml of tomato paste
• 430ml of diced tomatoes
• 1 tbsp of Worcestershire sauce
• 1 tbsp of garlic powder
• 1 tbsp of dry minced onions
• 1 tsp of salt

 

THE PROCESS:

 

■ Get that oven preheated to 180°C

■ While the oven is heating cut the cabbage into chunks and boil it for 15min. Take it out of the pot to cool down.

■ Cook the mince until it’s nice and brown

■ Get a bowl and throw the mince, tomato paste, tomato sauce, Worcestershire sauce, minced onions, salt and garlic powder into it.

■ Take a Baking pan that is about 20cm x 30cm big and spread a thin layer of the tomato mixture at the bottom.

■ Take half of the cabbage and put it over the tomato mixture layer. Top this with half of the tomato mixture. You now need to repeat the layers.

■ Now it’s time to cover the baking pan with aluminium foil.

■ Put it in the oven; make sure the oven is preheated to 180°C! After 60 to 90 minutes take it out and kyk how lekker it looks.

This Banting recipe with mince is enough for 15 people! More than enough for your average South African family of four.

It only has 4.6g of carbs per serving, so enjoy!

 

3. MINCED LAMB WRAPPED UP WITH EGGPLANT WITH TZATZIKI

INGREDIENTS YOU WILL NEED FOR THIS DELICIOUS BANTING RECIPE WITH MINCE:

 

Tzatzkiki Greek Sauce

• 1/2 medium cucumber
• 1 Tablespoon of lemon juice
• 2 cloves of minced garlic
• 1 Tablespoon of Freshly chopped dill
• 1 cup of yogurt – Make sure its whole milk!
• Salt and pepper

 

Minced Lamb Wrapped with Eggroll

• Two medium sized eggplants
• 2 Tablespoons of olive oil
• Salt and pepper
• 1/2 cup of feta cheese
• 1 medium onion all diced up
• 1/2 teaspoon of salt
• 1kg of minced lamb
• 1 teaspoon of dried marjoram
• 1/4 teaspoon of ground pepper

 

THE PROCESS:

 

■ Let’s start with the Greek Sauce. Wash the cucumber then cut it in half along the length of the cucumber. Start slicing it up nice and thin.


■ Mix up all the ingredients which include; lemon juice, yogurt, salt, pepper, cucumber, dill and garlic. Mix together well and leave the mix aside to set.


■ Ok, so time to get the lamb rolls started. Set the oven on grill and preheat to a medium temperature.


■ Wash the eggplants and start cutting them length ways in strips of about ½ a cm.


■ Place the slices of eggplant in the oven to cook until it looks nice and brown. This takes about 5 min each side.


■ Take the eggplant out of the oven when they are ready and put them into a bowl.


■ Throw 1 tablespoon of olive oil along with some pepper and salt into the bowl over the eggplant. Close the bowl with some aluminium foil to keep them warm.


■ Take a big frying pan and throw the rest of the olive oil in there, let the olive oil warm up, do not let it smoke! The pan is too warm if it does.


■ Add the onion in the pan and let it cook for just about 5 min, it should look see through.


■ Now its time to add the lamb mince, pepper, salt and marjoram. Cook the lamb mince with the mixture for about 10 min. If the lamb still looks pink cook it some more.


There we go, that is the main part of the meal done. Now to serve your family, lay 2 or 3 eggplant slices on the plate, add the lamb mince mixture in the middle and then add some feta cheese on top.


Roll the eggplant so that it goes nice and round like a sushi roll.

Lastly add the Greek sauce on top. This is definitely my favorite of all the different banting recipes with mince. It it truly delicious!


This dish is enough for 7 or 8 people and only has around 9 grams of carbs per serving :P
